If you want to avoid being tracked through your mobile phone or any other mobile device with a SIM card it is not enough to switch the device itself. You should also use a different SIM card, thus a different IMSI. Be aware that any SIM card can be linked to your identity unless you pay with cash and don't leave any personal data when you buy it.
